Sweet potato power bowl recipe in Brookfield WI.
Ingredients in Brookfield WI
- 1 Large Sweet Potato, Chopped
- 1 T. Coconut Oil
- 1 Chicken Breast
- 4 Cups Chopped Kale
- 1 Avocado, Chopped
- 1 T. Extra Virgin Olive oil
- 1 Red Bell Pepper, Chopped
- Sea Salt & Pepper to Taste
DRESSING:
- 1 Heaping T. Tahini
- 1 Lemon, Juiced
Preparation

- Preheat the oven to 350.
- Place chopped sweet potatoes on a baking tray with parchment paper and bake for 30 minutes.
- While the sweet potato is baking, add coconut oil to a large frying pan over medium heat. Season the chicken with salt and pepper. When the oil is melted, add the chicken breast. Cook until no longer pink then set aside while making remainder of salad.
- Add chopped kale to a large mixing bowl. Massage with avocado, olive oil, sea salt and pepper until wilted. Add bell pepper and chopped chicken breast.
- Mix up the dressing ingredients in a separate bowl and pour over the salad. Top with sweet potato and mix well. Serve immediately.
